Cucumber Raita for Hot Days and Hotter Curries

Ingredients

  • 2 cupsplain yogurtwhisked smooth
  • 1 largecucumbergrated, drained
  • ½ tsproasted cumin powder
  • to tastesalt
  • 2 tbspfresh mintchopped, optional

Method

  1. Drain grated cucumber briefly — raita should be cool, not watery.
  2. Fold cucumber into yogurt with cumin and salt.
  3. Chill 20 minutes before serving.
