Cucumber Raita for Hot Days and Hotter Curries
Cooling side that belongs next to biryani, not as an afterthought.

This page is for a simple cucumber raita: whisked yogurt, drained cucumber, salt, and roasted cumin. It is not boondi raita, not a thick hung-curd dip, and not a full salad unless you choose those forks. Keep it cold and thick enough to sit next to rice without flooding the plate.
Drain the cucumber
Aim for roughly 2 cups yogurt to 1 cup prepared cucumber. Grate or finely chop, salt lightly, rest a few minutes, then squeeze or drain firmly. Watery raita is usually a cucumber problem, not a yogurt problem. Persian or English cucumbers with fewer seeds need less work; seeded garden cucumbers benefit from scooping the watery core.
Yogurt and seasoning
Use plain full-fat or low-fat yogurt whisked smooth. Roasted cumin powder is the usual warm note; chaat masala or a pinch of chili is optional. Fresh mint or cilantro brightens the bowl; skip garlic unless you want a sharper kebab-shop style. Salt at the end after tasting — cucumber already carries some salt from draining.
When to serve
Chill at least 20 minutes if you can. Serve next to biryani, seekh, or a chili-heavy sabzi — not as a forgotten afterthought after everything else is plated. For potlucks, scale the yogurt first, then fold cucumber in closer to serving so it stays crisp.

Ingredients
- 2 cupsplain yogurt — full-fat or low-fat; whisked smooth — not sweetened
- about 1 cup grated or finely choppedcucumber — from 1 medium; peel if waxed; scoop seeds if watery; well drained
- ¾ tsproasted cumin powder
- ½ tspsalt — plus a pinch for draining the cucumber
- ¼–½ tspchaat masala — optional
- 2 tbspfresh mint or cilantro — chopped, optional
Method
- Grate or finely chop the cucumber. Toss with a pinch of salt, rest 5 minutes, then squeeze or drain firmly — watery cucumber is what ruins raita.
- Whisk yogurt until smooth. Fold in drained cucumber, roasted cumin, ½ tsp salt, optional chaat masala, and herbs.
- Chill about 20 minutes. Taste again — yogurt dulls salt in the fridge — and adjust before serving.
